Pennywort (asiatica pennywort or centella asiatica) is a tropical plant that is easily grown in sunny areas and is very nutritious.
Even though the fresh leaves have a slightly bitter flavor and astringent taste which might be difficult for some people to eat, they are still popular and are eaten as vegetables with Pad Thai and other side dishes.
In Thailand, pennywort is also used to make a very refreshing drink. This plant has some therapeutic properties, but may need to be avoided by people with high cholesterol, diabetes, breastfeeding, or are taking antidepressant medications.
Ingredients
4 cups of water (3 cups for drink and 1 cup for making sugar solution)
3/4 cup of sugar (or healthy substitutes)
7 oz (200 g) of fresh pennywort
3 tbsp of baking soda for washing the pennywort
(Optional) a pinch of salt
Directions
After sorting out any bad leaves, give the pennywort several good rinses. (Important) Place pennywort in a bowl with 1 gallon of water and 3 tbsp of baking soda for 5-10 minutes. Rinse with water several times to make sure the baking soda is washed out, then set it aside to drain the water. Pour 4 cups of water in a pot and let it boil for 5 minutes Pour 3 cups of the boiling water in a bowl and let it cool off. Melt sugar in the rest of the hot water and boil for an additional 2-3 minutes, set it aside, and let it cool off Put the fresh pennywort in a food processor with 3 cups of boiled water and blend. Pour the mixture through a strainer to separate the pulp. Pour the drink in a glass and add 2-3 tbsp of the sugar solution and salt. It is ready to serve either with or without ice!
