When boiling or heating anything, it is better for your food to come to a slow boil/heat, rather than too quickly. When boiling the water for beans, the beans are in the water already. That is part of the next process of taking the foam off the top of the cook water to make it more digestible when it begins to slow boil. If you are only boiling water than ofcourse it does not matter. This is for food along with the water.

Mikayla mentioned that cooking the beans at higher temperature kills the good stuff. Doesn't water boil at the same temperature regardless of whether you bring it to a boil from low/medium/hight heat? Therefore as long as you are going to boil your water it shouldn't matter what setting you use for your stove.
